Title: Selecting Ingredients--Hot Radish with Chili (Ck)
Categories: Info Chinese Check
Yield: 1 Servings

Although not as fiery as the hot chili paste with garlic, this preparation will spice up any dish. Consisting of small pieces of Chinese radish and shreds of hot pepper in a little oil, it is used as a condiment or seasoning in Szechwan and Hunan dishes. The radish itself, with its soft chewiness, gives body to this relish, but it is the taste of the hot peppers that comes through. Hot radish with chili is available in various size cans in Asian groceries. Once opened, it should be refrigerated.
